LA Aroma Exim present Spray Dried Natural Blueberry Powder. Spray drying, a well-known process of granulate production, involves transformation of liquid slurry into dried particulate matter through use of hot, inert gaseous drying medium. It is widely employed in processing of sugar rich foods such as fruit juices and increases the product's shelf-life significantly by reducing moisture content and water activity, thereby minimizing the risk of spoilage. In addition, the technique involves reduced packaging, storage and transportation cost consequently enhancing returns.

Blueberry juice (BJ) was prepared using crushed fresh blueberry fruit (Vaccinium corymbosum), commercially available in a local market center. Prior to juice extraction, the fruits were stored in a refrigerator by 12 h, and crushed in a juice extractor Turmix E-17. Juice and bagasse were stored in a glass container inside the fridge by 12 h, and after this period, were separated by vacuum filtration with paper filter, used in clarification of juices and wines. BJ was stored in darkness inside a refrigerator at 4 °C for avoiding degradation of antioxidants.
